Treat the special mother in your life to a dining experience at Fantasy Springs Resort Casino on Sunday, May 11, 2025. The culinary team led by Executive Chef Freddy Rieger has crafted special menus at Bistro, POM, and Fresh Grill Buffet.

At Bistro, guests can enjoy Key West lemon sole with butter-poached potato pearls and asparagus aglio e olio with sauce Veronique for $42 per person. The regular menu will also be available. Reservations are recommended from 5 p.m. to 10 p.m., and you can call 760-238-5654 for bookings.

POM offers twin petite filet mignon Oscar with jumbo lump crab meat, roast garlic mashed potatoes, sautéed asparagus, Pinot Noir demi-glace, and béarnaise sauce for $56 per person. The regular menu is also available here. Reservations are advised by calling 760-238-5834 between noon and 11 p.m.

Fresh Grill Buffet serves brunch from 10 a.m. to 3:30 p.m., or dinner from 3:30 p.m. to 9 p.m. Brunch includes made-to-order omelets, eggs Benedict, chicken fried steak with country gravy, apple pancakes, cheese blintzes, and traditional sides.

There will be fresh salads, imported Italian meats and cheeses, chicken noodle soup, pork pozole, chilled seafood like Alaskan snow crab legs and oysters-on-the-half-shell.

The carving board features roast prime rib and maple-roasted turkey breast among other options. Chef’s specialties include grilled-to-order ‘Churrasco style’ New York steaks and blackened fillet of salmon.

Desserts feature Fantasy Springs’ chocolate fountain along with cakes and pastries such as bananas Foster and caramel flan. Prices are $52.99 for adults; $39.99 for children ages 5-10; kids under four eat free.
