Portobello mushrooms serve as a delicious meat alternative. They are low in calories and rich in antioxidants, B vitamins, and fiber, supporting immune system and gut health. Consider swapping your traditional burger patty with a portobello mushroom for a healthy choice.

This recipe serves one person with a preparation time of 15 minutes plus marination, and a cooking time of 10 to 12 minutes.

Ingredients include one large portobello mushroom cap, whole wheat bun, optional vegan cheese slices, fresh tomato slices, pickled onions, micro arugula, and balsamic glaze. The marinade consists of olive oil, soy sauce, fresh rosemary, minced garlic, red pepper flakes, and steak seasoning. For the vegetarian honey mustard: avocado or olive oil is combined with Dijon mustard, apple cider vinegar, agave syrup, minced garlic with salt & pepper to taste.

To prepare: Marinate the mushroom by whisking together marinade ingredients in a dish or bag; add the mushroom cap to marinate for at least 30 minutes. Grill over medium heat until tender with charred edges—approximately four to five minutes per side. Toast the bun lightly until crisp.

Assemble by spreading honey mustard on both bun halves. Layer tomato slices and pickled onions on the bottom bun followed by grilled portobello and vegan cheese if desired. Add micro arugula topped with balsamic glaze before placing the top bun.
