Indio may be losing local favorite Casillas Bakery, but due to a new arrival, residents won't have a chance to shed a single pound.
The owner of Casillas has opted to retire and shutter the business after 15 years of service, as announced by the City of Indio on Facebook. "Saying goodbye with a touch of nostalgia, Casillas Bakery has closed its doors! Owner Jose L. has made the difficult decision to retire," the city wrote.
But no one will have to hunger for fresh-baked goods because the city revealed in the same Facebook post that Coachella's Mi Tierra Bakery is stepping in quickly to fill the void. In fact, they have already opened at the site.
While thanking the owner of Casillas and his family for dedicated service to the community, the city welcomed Mi Tierra's plans to open its second store at the location.
"We are thrilled to announce that Mi Tierra Bakery has chosen to establish its second location in the very same beloved building!" the city said.
In an interview with Desert Sun, the owners of Mi Tierra said they would ease into changes at the store out of consideration for loyal Indio customers. The menu won't exactly mirror the Coachella location but will include some unique recipes so as to cater to Indio appetites, for example, when it comes to various types of bread. Changes will be ushered in gradually so as not to overwhelm Casillas Bakery clientele, Nayeli Lopez, one of the owners, told Desert Sun.
To experience what Mi Tierra has to offer, the article said, customers can visit the store any day from 4 a.m. to 10 p.m., which represents the same hours kept in Coachella.
Although the store opened at 45-228 Oasis St. in late May, Lopez said the Indio site had not yet started baking and instead treats were being made in Coachella and delivered, the Desert Sun reported. The goal is to have fresh conchas and bolillos hourly in Indio as soon as the new site is upgraded and the equipment tested out, Lopez told the news outlet.
The city's final word was encouragement for Indio area residents to head on over to the new store and enjoy.
